Nothing captures it more than Larsen Aqua Ignis (A.I.), the world's first cognac aged in steam-roasted barrels.
The eaux-de-vie that make up Larsen Aqua Ignis have been carefully selected from the Fins Bois and Bons Bois vineyards for their intense fruitiness. These eaux-de-vie go through a two-step aging process. First, they are aged in traditional oak barrels. Once extracted, they are blended and placed in "Aqua Ignis III" barrels where they will continue their aging at an alcohol content of 50%.
This second stage of aging is the most particular. The "Aqua Ignis III" barrels are a small batch of fine-grained French oak barrels with a capacity of 225 liters that have been exposed to a triple brazier steam toasting. Each barrel is immersed in hot water and then toasted over hot fire, three times.
The combination of fire and water, pushed to its limits
The steaming process used to create Aqua Ignis is unprecedented and protected by law. This makes Larsen Aqua Ignis a cognac like no other, outside the typical cognac categories. It is also what gives it its name: "water" (aqua) and "fire" (ignis) in Latin, or the combination of water and fire, pushed to its limits.
